Celebrate National Rum Day with this mojito recipe

It’s National Rum Day and what better way to celebrate than with a classic mojito! Tom Dufek, co-founder of Plain Spoke Cocktail Co. joined us in the studio to share his recipe.
– 1 1/2 oz clear rum

– 3/4 oz fresh squeezed lime juice
– 3/4 oz mint syrup (see the recipe below)
– 8-10 mint leaves
1. Add all ingredients except mint to a shaker tin with ice and shake for 15-20 seconds.
2. Strain into a straight sided hi-ball glass.
3. Add mint leaves and fresh ice.
4. Top with soda water and stir contents to incorporate. Garnish with a bouquet of mint.
Mint Syrup
– 2 cups white granulated sugar
– 2 cups water
– 8 sprigs of mint
– Ice cubes
1. Add 2 cups white granulated sugar to 2 cups of water and heat on the stove.
2. Stir until sugar dissolves and then remove from heat. Do not boil.
3. Grab 8 sprigs of mint and boil a pot of water while getting another pot of water with ice cubes.
4. Submerge the mint in the boiling water leaf side down for 15 seconds and immediately put them in the ice bath for 2 minutes.
5. Shake off the water and remove the leaves from the stems.
6. Add the mint leaves and 16 oz of simple syrup to a blender and blend on high for 1 minute.
7. Strain this through a cheesecloth. Bottle and refrigerate (should last around 1 month).
