Avocado Quinoa Salad recipe

This Avocado Quinoa Salad is the perfect side dish for a summer barbecue or picnic! Check out the recipe below.

Ingredients:
cup uncooked quinoa
1 ½ cups water
1 15 oz. can chickpeas
1 medium avocado
1/2 cup chopped red onion
1 cup chopped tomatoes
1 cup fresh spinach leaves

Directions:
1. Bring water to a boil in a medium sized pot. Reduce heat and add 1 cup quinoa (optional seasonings: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp crushed red pepper). Cover and let simmer for 15 minutes or until all the water is absorbed. Chill quinoa in the refrigerator.
2. In a large bowl, combine chilled quinoa, chickpeas (drained), chopped avocado, red onion, tomatoes and fresh spinach leaves. Stir with a large serving spoon or spatula and store in the refrigerator. Enjoy!
