Simple salads to serve at summer parties

(WKOW) — Seasonal salad ingredients are sprouting, making them the perfect side for a summer party.

Lori Hackman, the owner of The Oilerie Sun Prairie, showed the Wake Up Wisconsin team a few healthy options on Tuesday.

Hackman says something like caprese skewers or salad are great snacks. You can make that by combining sliced fresh mozzarella, tomatoes and sweet basil, seasoned with olive oil and balsamic vinegar.

Another, more festive option, a red white and blue salad. The strawberry salad is topped with goat cheese, blue berries and candied walnuts. Hackman created a simple dressing mixing together a 1/2 cup of lemon infused olive oil and 1/4 cup of raspberry balsamic vinegar.

Hackman says using oils and vinegar in recipes has health benefits.

"It helps a lot with warding off a lot of diseases, for example, diabetes. It helps stabilize blood sugars so even long after you’ve eaten it helps keep the blood sugar stable," she said.
